Thats a thing thats bother me with many Star Wars costumes. I like it best with low shoes that are easy to get into and I would like to be able to put on the costume without extended help - Or is it so that many costumes require more or less help to get into?

When it comes to armour costumes, yes- we all need a lot or a little help to get in and out of costume. And those riding boots Luke have in RoTJ also requires some help to get out of.
Star Wars costume department considered cool looks, not ease unfortunately. And since we aim for screen accuracy, that’s what we have to abide to.

I need an alien race whom has feets big enough to get into comfortable I guess.

Jokes aside - Does anyone know if you can have zippers along them boots if they are hided when the shoe is put on?

Zippers are ok if they are on the inside of the calf so that they aren't visible, or if you have spats that cover them.

I want out of luck on commisioners for generic Jedi costumes - Are there any more you know about? I would prephere EU ones to stay clear from custom fees.

Also - Would it be possible to dress the same character in different costumes if its an original/OC one? (Do you use the term OC, Original Creation here?) Since I am looking towards both X wing and Jedi I started to think about doing an Twi lek (or Togruta) that have both Jedi and X wing pilot costumes in the end.

It is the costume that will be judged. So you will be judged as a twilek/togruta jedi by the jedi costuming judges and as a twilek/togruta pilot by the costuming judges. I know some people create backstories for their characters, but that is something personal and not something that is taken into account when the judges redeieve a costume application.

Thats in line with my thoughts.

But you also tangent something I have thought a lot of when it comes to characters like Ben Kenobi and old Luke and the beards they have. How important are those beards for those characters in this context? Can you imagine theatre beard?

If it's a face character with a beard, then you need to have a beard but it doesn't have to be a real one. I know of at least two female Obi-Wan Kenobis, and for obvious reasons they use fake beards.

Regarding the shoes for Jedi and Xwing pilots - Can screen accurate shoes be found in regular shops or do you always have to custom made them?

Brown riding boots in men's sizes for Jedi costumes could be hard to find, and I think that many people therefore buy them from specialist cosplay-shoe shops.

The X-wing pilots' boots in the old trilogy were German "Knobelbecher" jack boots. They were used by multiple branches of the German armed forces from before the WWII and then by both East and West Germany up until the reunification I think, so there is a lot of it in army surplus stores, in varying condition and price.
The same boots were also worn by Rebel troopers and by the Imperials who wear jumpsuits.
