Imperial officers serve in many different forms. Uniform color variants can be found in the different movies and there are a few costume pattern changes.

Revenge of the Sith (ROTS) officer variant
The earliest  Imperial officers to appear in the Star Wars timeline, as opposed to a republic army officer, are those seen in ROTS where we see a young Governor Tarkin and also Lietenaunt Oicunn and Lietenaunt Colonel Ejai. Basically it looks very similar to the officers we are used to see in episodes four to six. This is relatively new costume and requirement for 501st approval are not set yet.

Hat
No visible seem lines on front flip part of hat. Side cuts shaped as half circles. Long cuts from forehead to the back of the hat. The disc (hat badge) looks almost the same as episode four to six officers only with smoothed edges.

Tunic and Trousers
The fabric material is a rougher wool carbandine than the others. There should be clearly visible lines in the fabric and it should be quite a dark grey colour. The hsape of the tunic is like episodes four to six with few changes. It has epaulets on the shoulders, collar closure has been moved from the front to the side and there are some cuff variations. The trousers utilise a jodhpur pattern.

Boots, Gloves and Belt
Long black leather boots with no closure or ornamentation seen. Black leather wrist lengh gloves with no seamlines on top. A relatively wide (at least 5 cm) black leather belt W a silver coloured rectangular buckle with a similar greeblie as on the hat.

Insignia and Code Cylinders
The rank insignia was created with 3-D scanning machines and the style is different to episodes four to six. The insignia is a shiny metal plate with blue or red insets of dyed perspex. Governor Tarkin had code-cylinders on his costume as well but the shape of them is currently unknown

Weapon
No weapon or holster is shown in Revenge of the Sith.

Original Trilogy ANH, ESB, ROTJ Imperial Officers

These can be divided into subgroups depending the officer's duty and rank on army or navy.

Imperial Navy Officers
These are the most common officers in the Star Wars universe. They are seen on board Star Destroyers,  Death Stars etc.

Tunic and Trousers
These should be the same length as an ROTS officer. It is a double breasted military-style tunic with no epaulets. The collar opens from the front with the clasp on the right side. There is a single code cylinder pocket on either side of the tunic. The jodhpur type trousers are made from the same material and are the same colour. The colour should be as close as possible to pantone #449U olive grey. The most commonly used pattern is for an American Civil War costume, pattern 7274 from Simplicity.

Hat
Same colour and material as the tunic and trousers. The seam lines are visible on the peak and the sides are layered to overlap. A metal greeblie is attached to the front of the hat.

Boots, Gloves and Belt
Standard black leather knee-high riding boots with no visible zippers. Gloves are black leather with no seam lines on top. They should be wrist length. Leather belt about 5 cm wide with a silver snap clasp. Attached to the belt is a metal plate belt buckle with a greeblie attached to it.

Insignia and Code Cylinders
Officers have rank insignia placed on the left side of the tunic breast. At is set at the same height level as the optional code cylinders on their side pockets. The insignia is a metal plate with dyed plastic yellow, blue or red parts attached to it depending the rank of character. Examples of the different rank insignias can be found here. There are a few different versions of the code cylinders which are based on dosimeters. These are placed into tunic side pockets as optional parts of the costume. Aluminium chalk-holders has been used for code cylinders on 501st approved costumes.

COMPNOR Officers
These officers can be seen on board the first Death Star. The tunic is similar to a Navy Officer's but should be cream white in colour. These intelligence officers have straight black trousers and optional hat. They also wear normal dress shoes instead of riding boots.

Imperial Army / Stormtrooper Officers
These are the black uniformed officers usually seen supervising stormtroopers. The tunic, trousers, hat,
boots and all accessories are the same as Navy officers except for a few optional extras.

Metal boxes and a holster holding a Merr Sonn blaster may be attached to the belt. An Imperial issue Blastech E-11 is another weapon option. Some of the Imperial officers are seen wearing straight non-jodhpur trousers with normal black dress shoes. Note that the fabric of tunic, trousers and hat is not supposed to be toolight material. It should be heavy enough to keep up the appearance of a military officer and not wrinkle too easily.
